Veggies, the summer version

Ok, so the tomato is my all time favorite Summer Fruit/Veggie. Hands down. But running a close second is the cucumber. I like them. A lot. I like them plain, or with a little salt. I like them with onions and vinegar in a salady thing. However, the ideal, is the cucumber sandwich. Sliced cukes, mayo, salt & pepper. I like mine on a whole grain bread, but most any bread will work. It is so simple. It is summer.

Tell me what you like about the summer harvest most. Maybe you can sway me to try something!

    Brandywine tomatos, green bean (uncooked), cukes, spring onion salad! With Sea salt & cracked peper with a bit of vinegar & oil

    Roasted squash and zucchini, on a crusty bread with a slice of mozzarella (the real kind) and basil.

    Basil turned into pesto.

    Cucumbers marinated in rice vinegar with a little sugar.

    Roasted asparagus with a little olive oil + kosher salt.

    Now I’m hungry.
